Oysters have been a staple specialty mushroom since the early 90’s when popular demand from asian restaurants and new supermarkets rose. Local production is usually of high quality but Oyster Mushrooms need to be brought directly to restaurants and consumers as Oysters have a shelf life of 2-3 days and are best consumed fresh the day of. Our commitment is to daily fresh picked Oysters available throughout the lower mainland in restaurants and stores.
At our farm, we grow oysters on beds of organically certified compost, which produces a body mycelium throughout the bed, several cubic yards in total. This allows a much larger mycelial base from which mushrooms can draw nutrients and materials for vigorous growth yielding virile young caps which have the capacity to grow up to 20 times the size of regular caps and have a firmer and denser flavor and texture.
