Alba Clamshell (White)
Alba Clamshell/Hypsizygus tessellatus. They are best served cooked but require no cleaning and little trimming. Their taste is nutty, sharp and tangy. They are durable and hold their shape and texture in high heat. Shimejis are commonly found in soups, noodles, curries, stews and stir-fries. Also great for pickling, grilling and steaming.
